  • Stephanie

How many tablespoons or teaspoons of taco seasoning do I employ if I use a bootleg mix?

    1. Amanda

Generally a package of taco seasoning is about 2 tablespoons of seasoning. Simply if y'all're using a bootleg mix you may want to start with 1 tbsp and add more to taste. Hope this helps!

  • Anna

I give this v out of 5 stars. I but made it and it looks just similar the pictures, and tastes so good! My hubby loved it. Simply be mindful of the common salt content of the ingredients y'all use – it was perfect, but any saltier and it would have been also salty. I highly recommend using low-sodium beef goop and not adding any additional salt until the dish is finished and you've tasted it – information technology may not demand it.

I used half the corporeality of salt, unsalted butter, and low-sodium taco seasoning. The beef stock and canned tomatoes and greenish chilis were traditional (salted).

I'll exist making this again soon for sure.

  • ashton roberts

I used diced can lycopersicon esculentum since i didn't have rotel and ii cups water. Information technology is dandy! Thanks!!!

  • Tabanasaher

We love this recipe! Really piece of cake and my husband loves it. The only changes I make are using 2 cups of macaroni and putting the Rotel in a blender because my family complains most big tomato pieces. Everything else is the aforementioned amounts a listed -with the extra macaroni, there is lots left over for lunches or dinner the next day. Accept made this many times!

  • Leigh

Not just is this repast deee-lish, information technology'southward super like shooting fish in a barrel and super quick!! ii substitutes, because it's what i had on hand. 1st , I started boiling the noodles before I read the recipe and they were Penne noodles. Also, I only had shredded Mexican blend cheese. I just added the noodles to the meat mixture afterward information technology cooked a few minutes. I was SUPER hesitant about the blond roux… just my oh my!!!! Do not skip this function!!!!!! I have to acknowledge i probably would use merely a one/2 to 3/four of the the Rotel, just so my kids could relish information technology also. Thanks again!

  • Finally a Granny

This recipe looked very good but I knew I had to change it to decrease the heat then I exchanged the rotel with canned lycopersicon esculentum soup and exchanged the taco seasoning with Fiesta Ranch
Dip mix. I also threw in a few beefiness bouillon. It is just right now for me and my husband loves it! A great comfort food mail surgery–Thank yous!!!

  • Karen

Bang-up recipe! I would use an extra sharp cheddar next time. I besides did non take beefiness broth and used water simply I think that beef goop would be fifty-fifty better. One child loved information technology as did my husband. Will definitely make it over again.

  • Sarah C.

It was really salty & I didn't even added the common salt at the end. Next fourth dimension, I will utilise ane can of water & 1 can of broth. Thank you for sharing…I volition definitely brand once again!

  • Linda k

    Omg this dish was awesome

  • Clare

This was delicious! Only thing I would practise differently next time is reduce the corporeality of liquid – I constitute 2 cups of stock in addition to the tomato liquid to be manner too much (Rotel is something I oasis't been able to find where I am in Canada, peradventure information technology has much less liquid than the petite cut tomatoes I bought). I concluded upwardly simmering it for longer uncovered to reduce the soupiness and it was fine. Thanks for the recipe!

  • amenah

Found this on pintrest and am excited to make it, just wanted to know since the beef is browned beforehand, does it not get overcooked and hard when it is cooked once more w the macaroni?

    1. Lisa

Nope, it stays merely fine! I'k guessing it stays hydrated and juicy because of all the liquid it'due south cooking in.

  • MaraleeS

Seriously?!? This was AHHH-MAZING! My family unit loved it. Information technology was rich and creamy…and you really had me at Rotel. Love the flavors that the chilies bring to information technology. I doubled the recipe and added a Regular and a Balmy version of the McCormick Taco Seasoning. Didn't want to overpower. Used Medium cheddar and at least iii teaspoons of pepper…we like it. Thank you for the recipe…this hit the spot! I served information technology with a shredded salad. Nice crunch with the salad with the creaminess and heat of the Cheeseburger Macaroni.

  • Nadia

Is the amount of pasta supposed to exist 1 cup? Only want to make sure before I go far since it sounds likewise little for four people. Cheers!!!

    1. Amanda

one cup or 8oz of elbow macaroni per person. ii oz of pasta is one serving. This is a very hearty meal and will probably be enough, only feel gratuitous to make full in with salad and breadstuff if you have healthy eaters! :) Or you lot can merely double information technology and have leftovers. It's fifty-fifty better heated up! Promise this helps! :)

  • ColleenB. ~ Texas

Homemade Is Ever meliorate and tastes so much ameliorate than that stuff you lot buy in a box.
    Other suggestions:
Using a can of Nacho cheese, Fiesta Cheese in package or canned , canned cheddar cheese soup or packaged Taco cheese
Adding a can of Wolf Make Chili or Hormel (with or without beans) is also expert and topped off with crushed tortilla chips

  • Loren

Didn't accept the taco seasoning so I used McCormick'south Sloppy Joe seasoning in place of it with the "hot" Rotel because my husband likes information technology spicy. Added a little extra cheese on top. Admittedly delicious. Will definitely make this once more. Very warm and hearty on a cold evening. Thanks for the recipe!!

  • Anna M

  • Jennifer

No matter what I do, this recipe is way as well spicy for my family :(

I've used mild Rotel and balmy taco seasoning, and most of my family unit just can't handle the oestrus. Information technology'due south a shame likewise, because in that location is skilful flavor there if you tin can get past the overwhelming spice.

    1. Amanda

You tin can use a can of regular diced tomatoes instead of Ro-tel. Almost of the heat is in the Ro-tel! Hope this helps! :)

  • Nikki

  • Nichole Spencer

Is the macaroni pre-cooked or thrown straight into the meat and tomatoes uncooked, and then cooked in the broth or water while it all simmers together?

  • Nichole Spencer

Whenever I endeavor to make a roux, the butter and flour cease up turning into a clump or brawl in the bottom of the pan. I e'er follow the recipes verbal and make sure the butter and flour are of even amounts as the other. What am I doing wrong? Is this the reason my roux may be gritty? Should I add more butter or less flour? I'd love to effort this recipe but agape of ruining the roux.

  • Monica

I made this over again this night and we just LOVE it! I have passed it on to my sisters and their families love it likewise! I substituted regular diced tomatoes because that is what I had, homemade taco seasoning, skim milk, and gluten free pasta. Information technology turned out great! Thank you then much for sharing!

For those even so wondering- I used a regular size tin can of diced tomatoes for this. Probably virtually 14 ounces?

  • Sam

  • Anna

I only made this for my swain and I to eat for supper this week and it's AMAZING! I tasted the mixture earlier I added the cheese sauce and was a little worried information technology would exist besides spicy, but information technology had the perfect corporeality of spice after the cheese sauce was added! Thanks so much for this recipe, I've been feeling lately similar I recycle the same recipes calendar week after week for super, but this is perfect to change things up!

  • Jill

Want a really quick style to make this . . . I use a box of Velvetta Shells & Cheese or the Kraft Deluxe Mac & Cheese (elbows). I simply use that cheese sauce instead of making my ain. It is super quick. And I like to make my own "taco seasoning". Endeavour this with ground pork too. Cheers for the recipe for the homemade cheese sauce!! I am sure it is manner more wellness than Velveeta :)

  • Aya

Okay, I am So GLAD I found this. We fabricated it for dinner, and information technology was awesome. I used the taco seasoning recipe from Betty Crocker -1 T chili pulverisation, ane/2 t salt, i/4 t garlic powder – information technology was and then good. I will absolutely use this again. I fabricated "Johnny Marzetti" all my life….and this is information technology WITH cheese. I always melted a slice of cheese onto each serving. I added at touch of chocolate-brown saccharide because I used ketsup and a tin can of tomatoes before we knew Rotel. That gives it more of a kick. This was everyone's favorite at my house when the kids were little. Updated now..a new twist…thank you.

  • Kristina

This is amazing. I am a native Texan and tin capeesh the spiciness of this recipe.Fifty-fifty mild Rotel can be a bit spicy if you aren't utilize to it. I'd use a can of diced tomatoes to substitute if you don't similar a ton of oestrus. I would not skip out on making this cheese sauce. So much more than delicious than making with gross velveeta and really doesn't have that long at all. My only change is I add near ane/2 cup more pasta and also throw in some frozen corn for some sweet. I used wagon wheel pasta to make it fun. This recipe is in heavy rotation and is a huge hitting with my husband.

  • Sheila

  • Allie

Soo yummy! I read it and made it right away! I have to concord with some others that it was a bit TOO spicy. IMO it was because of the one/2 tsp of ground pepper. I thought it seemed a lot when I was calculation it, but with all the rave reviews, I went for it. Adjacent time, I will only use ane/8 tsp of the pepper, if any. (Possibly yours is never that spicy considering you use the pepper seasoning which may be milder?) Either way, I will be making it once more :) Peachy directions for the roux!

  • Codes for Plndr

  • Twis

This was adept. If you are cooking for a large family make this dinner stretch by using 3/four lbs of lean footing beef, double the macaroni to ii cups and double the liquid to four cups (I used half beefiness broth and half water). You really get more for less! And you won't even miss the extra meat. Good for your purse–good for your trunk. Thanks for this recipie.

  • Laura

OH MY! This was fantastic! Thank you!

  • Meagan

Found this on Pinterest and I've made information technology twice now. Information technology's great!

  • Lindsey

I made this last nighttime for dinner and got mixed reviews. The first taste is succulent…then the rut hits you. My hubby and my four year one-time were both gulping down milk to put out the fire :) Possibly next time I volition skip the taco seasoning, the rotel, or the pepper. Those iii combined were VERY spicy!

  • Naomi B.

I thought this was a chip spicy and thought it was much more than of a taco macaroni versus cheeseburger macaroni. My family loved information technology though and information technology all went in one dark!! I agree with 1 of the posters who thought information technology was meliorate than Hamburger Helper….I told my husband it was a Hamburger Helper for adults!!

  • Rebecca

This looks so yummy! Quick question…Do I take to drain the tomatoes if utilise a 14.v oz. tin can of diced tomatoes instead of the Rotel (which is 10 oz)? I have never had Rotel earlier and couldn't detect them in balmy and I'k afraid it volition be besides spicy with the regular. Thanks so much!

  • Bridget

I fabricated this for my hubby and myself this evening and it was fantastic. Perfect instructions, like shooting fish in a barrel to make, inexpensive to buy, and bully tasting! I think if I were making this for kids I would use diced tomatoes instead of Rotel. Cheers for sharing. :-)

  • Kelly

Oh my! The pictures look amazing! This is exactly the recipe for cheeseburger macaroni I've been looking for. Thank you so much.

  • Bridgette

Thank you so much for this quick and like shooting fish in a barrel recipe. I thought I had made a mistake when I tried to exist smart and employ evaporated milk, because my cheese sauce was really thick. When I mixed the sauce in with the beef mixture, it was however perfect. I stopped buying Hamburger Helper a while ago, fifty-fifty though no i seemed to dislike it but me. Now I have a superior substitute!

  • Michelle

  • Clarisa

Simply happened to stumble upon this recipie and oh my gosh it's amazing!!!! My family loved it! I might try using the original rotel next time, the balmy was just a tad much for my toddler, merely he ate it anyway! (:

  • Tomi

Awesomely good! I used velveeta instead- FAB!

  • Ambar

Its funny Amanda that you made this considering this is what I often make for my kids. They admittedly love information technology, merely I add Sofrito to the meat which gives it this earthy, delicious flavor.

  • Corilynn

Just found this recipe posted on Pinterest and I had to try it. I changed it alittle, since we dont eat alot of cherry-red meat, I used chicken instead. I cut upward a single chicken breast into small-scale cubes and cooked information technology with a bit of EVOO and and so followed the rest using chicken goop instead of beef broth. It was dandy although a fiddling bit spicier than I though it would be from previous comments. I wonder what I did to brand it that way, maybe the taco seasoning I used. ??? Anyways, I loved it! My daughter is 2 and she's a picky eater, even through the spicyness she instisted on eating bite after bite with a few sips of milk in between! I'll definitally be trying this again. TY!

  • Laura

Thank you for this recipe! I made this using Daiya cheese. My children have never had hamburger helper due to a nutrient allergy and they LOVED this! I think it is so much better than Hamburger Helper. Give thanks yous again.

  • Barbara

I tried this recipe this evening for the offset time. Permit me say this…..this is not like Hamburger Helper in any way except for maybe how information technology looks. Information technology's mode more tasty and succulent! I was prepared to be disappointed for like and so many recipes I try after reading all the positive reviews, I'1000 expecting the best. Almost of the fourth dimension they're not even close to being good at all. This recipe didn't disappoint. Cheers for sharing!

  • dandra steber

  • April

I won't buy hamburger helper so I was really excited to endeavour this recipe. YUMMY…even the kids liked information technology although they did say like others have commented that it was spicy. I bought original Rotel because I didn't realize they had a Mild Rotel so that'due south probably why, I just assumed original was mild. But it was just the right amount of spice for me and my husband. Thanks for the nifty recipe!

  • Sabrina

I was looking for something new to make for dinner, so I came across your website and asked my husband to pick his dinner for tonight. We happened to have a tin of diced tomatoes on hand and some leftover ground beef and shredded cheese, so he chose this recipe. I was skeptical at showtime considering information technology looked soupy and runny in the picture show. I thought it would just be okay. To my surprise, it came out flossy and thick and admittedly succulent! My husband and I had 2 big bowls each and wanted more than, just we wanted to salve some for leftovers tomorrow! It fabricated my house smell and then fragrant and effluvious! Fifty-fifty without the cheese, I could eat it as is… just like a chilli mac! Yumm!!! But my hubby prefers the cheese! I was worried the cheese sauce didn't turn out right because information technology came out more than similar Gak (call up Gak?) or slime, only I added a touch more than of milk and mixed with the mac/beef mixture and it turned out perfect! I don't like spicy, so I used a tin can of regular plain diced tomatoes. There was still a kick to information technology from the taco seasoning, simply I drank milk with my repast and I was fine! Not merely was information technology like shooting fish in a barrel to make, it was QUICK! Even on a hot summer day, I would eat this drenched in sweat and make it over and over again! =) It was delish! Thank you for the recipe!

  • Heather

Literally only made this, and it'south great! I slimmed it down past using turkey meat, skim milk, and 2% cheese and it withal tastes delish. I wanted an culling to Hamburger Helper, and this is MUCH improve! Cheers!

  • Itlitzabete

I'm new to cooking and I made this tonight for my parents for dinner and I but wanted to let you know that information technology was a HUGE hit! What a boost to my kitchen confidence :) Cheers for sharing, I volition definitely be making this again and once more.

    Hi Amanda!

I stumbled upon this recipe last week and knew I had to make information technology! :) Made information technology tonight and it was delish only not cheesy enough! Well, not for us anyhow. Was it b/c I should take added more cheese or b/c I used reduced fat cheddar? Plus, we had a ton of beefiness goop left in the mixture. Was information technology due to the beefiness? I used 80% lean. Apologies in advance for the q's. Newb here. ;)

  • Sheryl

I made this recipe the other night and I loved information technology!! It reminds me of a spicier version of cheeseburger Hamburger Helper, but I like knowing that information technology didn't come from a box. It was a picayune too spicy for my hubby's taste, but it was right up my aisle and I'll definitely be making it once more! I likewise was surprised at how easy information technology is to make the roux- I've never done it before and after learning how I'm excited to employ the technique in other dishes. Thank you Amanda!

  • James

I was skeptical about parts of this meal. I thought "there's no way the roux is going to terminate up that creamy". Apparently, I've never done it right. I acknowledge information technology, I've never made a roux correct until now. Now, for the changes I made to the recipe. First, I ended up getting virtually 1.6lbs of less lean beef, didn't cook down equally much as I'd hoped, then it was a chip more compact than I imagined, but it worked. Second, our Ro*Tel was well beyond its decease engagement (didn't have a use for information technology before), so we ended upwards using evidently diced tomatoes. Finally, instead of taco seasoning, I used some grilled steak seasoning, and it came out quite good. I used precipitous cheddar cheese, freshly grated (I've always found that the stuff in numberless has bug with any kind of sauce or melting) and that sharpness shines through even in the final product, deliciously and so.
I made this for myself and my parents, then I had to watch the common salt, which is why I didn't use the taco seasoning. I cup of broth and one cup of water drastically reduces the sodium, as well as using a different set of spices. Sadly, I couldn't just dump in garlic and onion powder, because dad's non a fan of the onion or the garlic.
All in all, a fantastic recipe. Ane of the all-time I've found, and will help me with my roux mixes in the hereafter. Look out, alfredo, I'k fixing my recipe for you next.

    1. cin

  • Nichol

Oh yum. My hubby will honey this. Going to make this equally soon as I get everything.

  • Catherine

Just finished eating this, it was a HUGE hit with our family unit :)(1 son had 3!helpings!!! I had to modernistic a bit as I forgot to bring my pregnancy brain with me to the grocery store this morning…I ended up using Burrito mix, Almer's Accents Chili style diced tomatoes, Roast Beef Au Jus from last night'due south roast ;) and Kraft TexMex shredded cheese. Added Keg Cajun Seasoning instead of salt and some dried Chipotle pepper seasoning and a small flake of Frank'southward Ruby Hot on my husband's 2 servings of information technology lol
Thanks And so VERY much for the detailed pics of the Roux, information technology made it much easier to duplicate than reading a description in a book!!

SUPERB recipe for a family unit, great taste, budget-friendly, and a spin on an all fourth dimension classic favorite for all :) The rich flavour made it piece of cake to hide the fact that I used SMART fiber/whole grain pasta which the kids usually turn up their noses at ;)
Thank you Thanks Give thanks you!!!!! For sharing, and all the work you put in this page for us readers ;)

  • Michele

Fantastic recipe! I fabricated information technology final night and it was filling and tasty. Perfectly seasoned. I used reduced fat cheddar to save some calories and it was great. Only event I had was there was withal quite a lot of goop left even later the noodles were completely tender. Fabricated the cheese sauce thinner, just later it sat for a flake, information technology thickened upwardly OK. I might use a footling less broth adjacent time.

  • Meghan

I would just like to say this was… Amazing. I usually hate anything hamburger helper related but this was splendid. I used less sodium taco seasoning, soy milk and veggie ground. I likewise added onions to the veggie footing and paprika to the cheese sauce. Soooo good. My husband has put this in is his peak v favourite dishes. Thank you so much for sharing this.

Every time I've fabricated a sauce with cheddar cheese, it's come out a little bit gritty. Anyway, I cannot expect to try this, I dearest your recipes. Thanks so much for sharing them!!

    1. Amanda

The trick to this is to remove the sauce from the heat before adding the cheddar. Give it a few adept stirs to cool it down before adding the cheese – there will still be plenty of residuum heat to melt the cheese. Information technology'southward when the cheddar gets besides hot (to the betoken of bubbling) that information technology starts getting gritty.

    2. Guiltlessness

I am going to use the shredded Velveeta cheese you tin can buy in the pocketbook. I recall that volition piece of work best, as it is made to "cook". I concur about the cheddar.

    3. Amanda
